All of our beers are brewed one barrel at a time (they're even mashed in a barrel!), lending a distinct vintage quality to each batch. It also allows us to stretch our wings creatively, completely free of a production schedule.
All of our beers are produced using a variety of yeasts and bacteria. Our inspiration comes from the farmhouse brewing traditions of Europe, and brewers of funky, weird beers around the world.
Most of our beers start and finish in oak barrels that previously held wine or various spirits. The oak and its previous inhabitant become a part of the flavour profile, and our mixed culture takes residency in the nooks and crannies.
Snafu is still available now at the brewery and online. Look for it, along with Crumble and Visions, at Big Bear and Whiskeyjacks off-sales soon!
BARREL- AGED GOLDEN SOUR WITH HASKAPS, RHUBARB, & TONKA BEANS
A golden sour ale, brewed with a mixed culture of sacc, Brett, and Lactobacillus, and aged in one of our oak Solera wine barrels. Aged on organic haskaps from Yukon Berry Farms, locally grown rhubarb, and tonka beans. Tart and fruity, with warm notes of baking spice.
5.5% alc/vol. 500 ml. Bottle conditioned.
BARREL-AGED GOLDEN SOUR WITH MANDARIN ORANGE
Golden sour ale, brewed with a mixed culture, and aged in a Solera oak wine barrel. Refermented with freshly squeezed, Mandarin orange juice, and dry-hopped with Amarillo and Citra. Mimosa-like, making it the perfect holiday brunch beer!
5.5% alc/vol. 500 ml. Bottle conditioned.
BARREL-AGED GOLDEN SOUR WITH PLUMS
Solera wine barrel-aged, mixed-fermentation golden sour, aged with Italian plums from the Okanagan. Tart and jammy, like biting into a fresh piece of fruit.

BARREL- AGED DARK SOUR WITH FIGS, CINNAMON, & VANILLA BEAN
A strong dark sour, brewed with a mixed culture of sacc, brett, and Lactobacillus, and aged in one of our oak, Solera wine barrels. Aged on dried figs, cinnamon sticks, and vanilla beans.
8.0% alc/vol. 500 ml. Bottle conditioned.
BARREL-AGED GOLDEN SOUR WITH BLACKCURRANTS & BLUEBERRIES
A golden sour, brewed with a mixed culture of sacc, brett, and lactobacillus, and aged in an oak Solera wine barrel. Portions of the beer were aged separately on whole blackcurrants and blueberries, and then blended together before packaging.
5.5% alc/vol. 500 ml. Bottle conditioned.
BARREL-AGED FARMHOUSE ALE WITH SPRUCE TIPS
Dry, funky mixed-fermentation farmhouse ale from one of our Soleras, "dry-hopped" with locally foraged spruce tips and Cascade hops.
6.5% alc/vol. 500 ml. Bottle conditioned.
Wondering where to find Deep Dark Wood when the brewery is closed? Look for us on the shelves at Big Bear Donair, Whiskey Jack's, and Yukon government liquor stores in Whitehorse, Dawson, and Haines Junction (subject to availability). Also available at Woodcutter's Blanket and Wayfarer Oyster House. If you want to see DDW at your favourite establishment, have them contact us!
Stop by the brewery to pick up bottles to go (sorry, no onsite pours) and brewery merch, or just to see our operation. All ages welcome! We're located at the first left on Collins Lane, just off Mt. Sima Road.
