We're what's known as a nanobrewery. Our brews are small (a little over 200 litres at a time), and we don't adhere to the "flagship" model. This allows us to stretch our wings creatively, completely free of a production schedule.
Our beers are produced using a variety of yeasts and bacteria, and are "living" in the bottle (no kettle sours brewed here). Our inspiration comes from the farmhouse brewing traditions of Europe, and brewers of funky, weird beers around the world.
Many of our mixed culture beers are aged (and sometimes fermented) in oak barrels that previously held wine or various spirits. The oak and its previous inhabitant become a part of the flavour profile, and our mixed culture takes residency in the nooks and crannies.
Although we're mostly known for our sour and funky offerings, we also dabble in "clean" beers. Owner and head brewer Matt is an unabashed hophead, so look for lots more IPAs coming your way. We've also got a variety of other styles on deck, so look for stouts, porters, clean Belgian styles, and more, coming soon.
While we put our all into every beer we make, our series of Reserve sour beers is where we really flex our creative muscle. These special, member's-exclusive releases feature our more mature barrel-aged beers, unique and higher fruit rates, more diverse microbes, unique barrels, and special blends of beer pulled from multiple barrels.
Stop by the brewery to pick up bottles to go (sorry, no onsite pours) and brewery merch, or just to see our operation. All ages welcome! We're located at the first left on Collins Lane, just off Mt. Sima Road.
