All of our beers are brewed one barrel at a time (they're even mashed in a barrel!), lending a distinct vintage quality to each batch. It also allows us to stretch our wings creatively, completely free of a production schedule.
All of our beers are produced using a variety of yeasts and bacteria. Our inspiration comes from the farmhouse brewing traditions of Europe, and brewers of funky, weird beers around the world.
Every one of our beers starts and finishes in oak barrels that previously held wine or various spirits. The oak and its previous inhabitant become a part of the flavour profile, and our mixed culture takes residency in the nooks and crannies.

SAISON WITH RHUBARB
This year's batch was brewed with Hallertau Blanc hops, and aged on 100 pounds of locally-grown rhubarb! 7.0% ABV 500 ml
GOLDEN SOUR ALE DRY-HOPPED WITH MOSAIC
Our flagship sour with Mosaic hops. Bursting with fruity aromas and flavours, all derived from the microbes and hops. A personal favourite. 5.8% ABV 500 ml
GOLDEN SOUR WITH ORGANIC HASKAPS
A tart ale brewed with wheat and barley, and fermented with a blend of microbes. Refermented on organic haskaps from Yukon Berry Farms. Bright and fruity, with notes reminiscent of blueberries and raspberries, and a deep vinous quality. 5.5% ABV 500 ml
DARK SOUR WITH BLACK CURRANT
A dark sour refermented with black currant puree. Pours a mysterious, deep purple, that borders on black. A cap of mauve foam invites a taste. Jammy and tart, with a hint of cocoa. 6.0% ABV 500 ml
SAISON WITH GALAXY HOPS
A mixed fermentation saison, well hopped with Galaxy, for its delicious, tropical punch! This one is for the hop heads and farmhouse fanatics alike! 7.0% ABV 500 ml
SAISON WITH FORAGED ROSE HIPS & GRAPEFRUIT
Brewed with locally foraged rose hips in the kettle, and fermented with a mixed culture of saison yeast and Brett. Refermented with freshly squeezed grapefruit juice, and dry-hopped with Citra. 6.5% ABV 500 ml
MIXED FERMENTATION ALE WITH SPRUCE TIPS
Celebrate the holidays like a Viking! A strong spruce tip ale, fermented with Voss kveik and Brett. The tips were first added to the kettle, and then more went into the barrel as a dry-hop, along with Cascade. Perfect for your Solstice festivities! 7.8% ABV 500 ml
DRY-HOPPED AGED GOLDEN SOUR
A golden sour, aged for 8 months in the barrel with a diverse mixed culture of saccharomyces, brettanomyces, lactobacillus, and pediococcus. Bright and fruity (lemon and green apple), with a complex, earthy funk. Lightly dry-hopped with Ella and Hallertau Blanc. 6.0% ABV 500 ml
AGED GOLDEN SOUR WITH PLUMS
The idea for this beer has been dancing around in my head for some time. A golden sour, aged for 8 months in the barrel with a mixed culture of saccharomyces, brettanomyces, lactobacillus, and pediococcus. Refermented on a copious amount of Okanogan plums. Jammy and tart, with a delightfully complex Brett funk. 6.0% ABV 500 ml
